Yesterday was busy but full of grand adventure and beautiful people. We had a family day at Alum Creek, one of our local water playgrounds around Columbus. I’ve been dreaming of paddle boarding for a few years, and I finally tried it. Friends, I’m telling you it’s pure magic! Paddle boarding gives you this power to explore the nature around you while staying active on the water. I like that I’m in the water without having to get wet. It requires a small amount of balance and strength, but really it is pretty simple. At times I pushed myself to strengthen muscles and other times I just cruised the shores taking in the scenery.

For the sake of adventure we kept food very simple. I had a full morning of instructional coaching and didn’t have much time in the kitchen before our water day. This Italian salsa was deliciously fresh and quick to throw together! We ate it with organic potato chips because that’s what we had in the pantry, but plantain chips or cassava chips would be even better! Italian salsa is also delicious on grilled chicken or shrimp.

Ingredients

  • 5-7 small sweet tomatoes or 2-3 large tomatoes diced
  • 1/4 cup of green onion or purple onion finely chopped
  • 1 can of green or black olives (Click to find a brand with clean ingredients. Most canned olives have additives)
  • About 2 tbsp avocado or grapeseed oil
  • About 2 tsp apple cider vinegar
  • 1 tbsp freshly chopped parsley
  • 1-2 tsp salt
  • 1/2 tsp garlic powder

The ingredients in this recipe are pretty subjective. Have fun, play with it, and taste it along the way. Add more parsley or onion if you like or leave out garlic if you don’t like it. It’s pretty simple. Chop up the veggies, toss them in a bowl and add the other ingredients. Stir it up and have fun taste testing! Chill it in the fridge, or serve it fresh.

    1. Jane we have family who lives there. We used their equipment, but I’m pretty sure you can rent them at Alum Creek. We should get a bunch of women together and go!
