I love cabbage because it is low carb yet filling. This recipe is actually my mothers. This faithful family recipe is a regular in the Gurney house because it is not very expensive and it’s super easy to make.

Ingredients

  • 1/2 onion
  • 1/2 green cabbage thinly chopped – about 6 cups
  • 1 carrot shredded – about 1 cup
  • 1 lb ground sausage
  • 3 tbsp avocado oil or grapeseed oil
  • 3/4 tsp salt
  • 1 tsp cumin
  • Fresh cilantro – optional

Directions

Thinly chop your onion and cabbage then set aside. Shred your carrot and set aside with the other veggies.

In a large pan, brown the ground sausage until cooked through. When the sausage is cooked, set aside in a glass bowl. Use the same pan to cook the veggies, this will add flavor.

Heat 2 tbsp oil to medium high. Add the onion and sprinkle with 1/4 tsp salt. Toss the onions so they begin to brown. After a couple of minutes, add another tbsp oil then toss in the cabbage. When these veggies cook down, add the carrots the shredded carrots.

Sprinkle 1/2 tsp salt and 1 tsp cumin into the veggie mixture. Add the cooked sausage and mix together combine flavors.

Sprinkle freshly chopped cilantro on each portion and eat up!
